Pantry detox granola

The other day when i was making bone broth i caught myself thinking how weird it is that i always seem to be short on mason jars even though i recycle so many old nutbutter jars and keep buying more mason jars. Yet, somehow, when i need my jars i only ever have like one or two left at my disposal. HOW!? This drives me nuts. So this morning i decided to do a really thorough sweap of my pantry cupboard and like i suspected, found like 15 of my favorite mason jars, every single on of them with like 2 inches of old, forgotten nuts or seeds in them. Sound familiar? Surely i can’t be the only one hordering uneaten nuts and seeds and trailmixes in my pantry?

So, what to do with all this, i need my freaking jars back! A great way to clear up space, get your jars back and make use of all those nuts and seeds is to make a crazy granola mix of everything you can possibly find in your pantry, they usually turn out pretty amazing, since the ingredients vary every time. This probably turned out to be my most delicious granola yet. I even found an old container of Bulkbarn sunflower seed nutbutter, probably not the best quality but whatevs. So the recipe that follows is not going to have any specific measurments, i just threw whatever i wanted to get rid of in a bowl, just added some spices and nutbutter, and put it in my dehydrator on low-medium for 24h. And this is not supposed to be a set recipe, as you can kinda tell from the blog heading lol. Just be creative! The main objective here is to clear out your pantry anyway, the granola is just a great bonus of that process.

INGREDIENTS:

  • shaved almonds

  • pekans

  • whalnuts

  • pistachios

  • hempseeds

  • coconut flakes

  • sunflower seeds

  • pumpkin seeds

  • dehydrated blueberries

  • oats

  • 1/4 cup honey

  • 2 tbsp almond butter

  • 1/4 cup pumpkin seed butter

  • 1/4 cup coconut oil

  • cinnamon

  • cardamom

  • sea salt

  • maca powder

  • mesquite powder

INSTRUCTIONS:

  1. Melt coconut oil, nut butters, and honey in a double boiler on the stove. Mix to combine.

  2. Mix all the dry ingredients in a large bowl, add some spices of preference (i used sea salt, cinnamon, cardamom, maca powder, and mesquite), then pour the nut butter mixture over the dry ingredients. Use your hands to mix everything together into a thick, sticky, crunchy “dough”.

  3. Line your dehydrator trays with parchment paper and gently spread the granola over the trays. Turn your dehydrator to 55ºC / 130ºF, and dehydrate the granola for 24h. (And try not to eat the whole batch before it’s even done, trust me it is THAT good!)
